Yields: 10 Servings Difficulty: Easy Prep Time: 10 Mins Cook Time: 30 Mins Total Time: 40 Mins

Russian Cheese Pancakes called syrniki have become my latest favorite breakfast, snack, or even dessert. This is the first time I’ve made these and from now on, I am in love with the result. The yummiest pancakes I’ve ever had! I started to dream about the next ones right after I had the first bite when it was still warm. Slightly crispy on the outside and slightly creamy on the inside. Check them out!

  • Take a bowl and put the ricotta cheese, salt (if you use salty cheese, do not add salt), black pepper, flour, eggs, and milk. Mix well and you have a mixture of salty pancakes.
  • Heat a frying pan with a little olive oil and pour from the mixture into the pan enough for a medium pancake. With an ordinary spoon, collect the liquid if it grows on the side and collect it towards the pancake. Once it is baked on one side, turn it over with a spatula and bake on the other side. Average fry for 2-3 minutes on the side. Repeat the procedure until you have used up the whole mixture.
  • Once all the pancakes are ready, decorate, and serve. I decorated it with sour cream, young onions, and tomatoes. Mh! Beauties!
