Oat & Yogurt Flatbread with Green sauce, Mozzarella and Tomatoes

This kind of flatbreads are lightyears digestively easier than flatbreads made with yeast and flour. They taste awesome, only have two main ingredients and flour is none of them. You can make four medium sized flatbreads, or one larger (depending on the pan that you will use). I choose to make several smaller flatbreads because it was easier for me to flip them. You can place 1 large or 3-4 smaller of them in a lengthwise bowl, and top them with the magic ingredients as they are announced in the headline. One of the best breakfasts that I’ve made!

  • Make oat flour by mixing rolled oats in a blender or food processor. You can add a little bit of corn starch to make the flour a little stretchier and softer.
  • Stir together oat flour, baking powder and salt in a bowl.
  • Add the yogurt and stir until it comes together into a sticky ball. Cover with a plastic bag or clingfilm and leave for 15 minutes (this will make it easier to roll). Meanwhile make the Green Sauce.
  • Dust oat flour on a clean worktop and scrape out the dough. Shape into a round ball. If it feels too sticky, you just dust it with a little extra oat flour and work it into the dough (wet hands or corn starch can also help making it less sticky).
  • Divide into 4 equal parts and shape each into a ball. One by one, roll them out into a oval disc, place the rest in the plastic bag so they don't dry out.
  • Heat a cast iron pan to medium hot. Brush it with a little bit of olive oil, place the flatbread in the pan and fry for about two minutes on the first side or until it looks golden with dark spots. Turn and fry on the other side for one more minute. Place in a cloth while frying the rest.
  • Green Sauce
  • Finely chop the herbs, add the garlic spread and the other ingredients and mix in a bowl or mix everything together.
  • Assembling
  • Spread out a thick sour cream layer on each bread and sprinkle with the green sauce.
  • Slice the tomatoes thinly and arrange them evenly over each bread.
  • Melt a few pieces of mozzarella in the microwave, and place them over the tomatoes.
  • Sprinkle with chili powder.
