Another phenomenal Macedonian recipe I learned from my mother. Easy, simple and extremely tasty. Have at home the smell and taste of Macedonia at least several times a month.

  • Chop the onion, zucchini, eggplant and carrots into small pieces, put in a frying pan, add a little water and simmer for a few minutes.
  • Add a little oil and add the salted and diced chicken to the pan with the vegetables. Allow to simmer for another 15 minutes.
  • Add diced tomato puree, spices and potatoes. Let simmer for another 10 minutes and add a little more salt and oil.
  • Transfer the whole mixture to an earthenware pan, add a little more hot water and sprinkle with parsley. Bake for 30-45 minutes at 180 degrees.
