Macedonian Cuisine: Baked Gouvech & Chicken Pot ??

Another phenomenal Macedonian recipe I learned from my mother. Easy, simple and extremely tasty. Have at home the smell and taste of Macedonia at least several times a month.

Ingredients
  • 500 g chicken meat
  • 2 tbsp olive oil
  • 3 onions
  • 1 zucchini
  • 1 eggplant
  • 3 carrots
  • 4 tbsp tomato paste
  • 3 potatoes
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp red pepper
  • 1 handful of parsley
  • 2 bay leafs
  • 1 tsp garlic powder
Instructions
  1. Chop the onion, zucchini, eggplant and carrots into small pieces, put in a frying pan, add a little water and simmer for a few minutes.
  2. Add a little oil and add the salted and diced chicken to the pan with the vegetables. Allow to simmer for another 15 minutes.
  3. Add diced tomato puree, spices and potatoes. Let simmer for another 10 minutes and add a little more salt and oil.
  4. Transfer the whole mixture to an earthenware pan, add a little more hot water and sprinkle with parsley. Bake for 30-45 minutes at 180 degrees.
