The Israeli sambusak (sambusaq) is the Israel’s answer to the calzone or empanada. It is a pastry that you can make it by baking or frying and it has a triangle or half-moon shape. The recipe belongs to the Jewish cuisine, and various recipes have been brought to Israel by Jewish migrants from the Middle East and Africa. It is actually a really fun meal because you can customize your flavors and fillings. Also, you can have it as a breakfast or a snack. Today I made a healthy sambusak version or you (by baking, of course), with crunchy crusts and plenty of fresh chard and cottage cheese (or ricotta). If some day you go to Israel, don’t forget to look up or them! Meanwhile, make them at home.

- Chop the chard into pieces and fry. Add cottage cheese, salt and sour milk. Stir and mix with the sambusak filling mixture (preparation 15 minutes).
- Make a mixture of carbonated water, olive oil and baking powder to sprinkle on the crusts.
- Sprinkle each crust with the mixture and fold it three times to get a long rectangular crust. Finally, place a spoonful of the filling on one end of the crust and then roll it in the way shown in the second picture, so you can get triangles.
- Arrange the triangles in a baking pan and coat and mix with sparkling water and oil.
- Bake for 15 minutes at 180 degrees, then remove and coat with a mixture of scrambled eggs and a tablespoon of sour milk. Sprinkle a mixture of seeds on each sambusak and bake for another 15-20 minutes at 190 degrees.
