Here’s a really terrific Coconut Curry Sauce with beautiful depth of flavor yet is made with everyday spices. It’s an Indian style sauce – outrageously addictive, and pairs beautifully with chicken or vegetables. As a side dish, I recommend cooked rice or baked potatoes.

- Chop the meat (or cooked broccoli) into pieces. Put them in a bowl, sprinkle with spices and mix.
- Fry the small pieces of garlic and onion, then put the meat to simmer for about 15 minutes in 2 tablespoons of olive oil in the same pan. Add the mushrooms and simmer for another 10 minutes.
- Add the coconut milk and coconut flour, simmer for another minute and add the tomato puree.
- After just 5 more minutes on low heat, the dish is ready to serve.
