Indian Cuisine: Coconut Curry ??

Here’s a really terrific Coconut Curry Sauce with beautiful depth of flavor yet is made with everyday spices. It’s an Indian style sauce – outrageously addictive, and pairs beautifully with chicken or vegetables. As a side dish, I recommend cooked rice or baked potatoes.

Ingredients
  • 500 g chicken meat (instead of meat you can use broccoli)
  • 250 g mushrooms
  • 1 onion
  • 2 garlic cloves
  • 1/2 cup of coconut milk
  • 1 tbsp coconut flour
  • 1 tsp chilli
  • 1 tsp vegetable spice (or salt)
  • 1 tbsp red paprika spice
  • 1 tbsp dried basil
  • 2 tbsp olive oil
  • 1/2 cup of tomato paste
Instructions
  1. Chop the meat (or cooked broccoli) into pieces. Put them in a bowl, sprinkle with spices and mix.
  2. Fry the small pieces of garlic and onion, then put the meat to simmer for about 15 minutes in 2 tablespoons of olive oil in the same pan. Add the mushrooms and simmer for another 10 minutes.
  3. Add the coconut milk and coconut flour, simmer for another minute and add the tomato puree.
  4. After just 5 more minutes on low heat, the dish is ready to serve.
