Creamy, healthy, refreshing and incredibly tasty salad. If I have to choose out of the many ways to make potatoes, this is one of my favorite. This salad can represent a tasty side dish to any main meal or itself can represent a main dish used for lunch or dinner salad. It is totally up to you the way you’ll fit it into your menu. - Peel the potatoes and put it in a saucepan so they can be boiled.
- Meanwhile, chop the onion, cucumber and radishes into small pieces.
- Mix the sour cream (or Greek yogurt) and mustard in a separate bowl to get a homogeneous mixture.
- Once the potatoes are cooked, chop them into small pieces in a bowl, add salt, chopped onion, cucumber, radish and sour cream and mustard mixture.
- Mix well and decorate with small pieces of spring onion and finely chopped radish.
