Bolognese sauce known in Italian as ragù alla bolognese, (or simply ragù) is a meat-based sauce in Italian cuisine, typical of the city of Bologna. Take a look at this 100% healthy variation of the sauce, combined with wholemeal pasta penne.

- Boil the pasta and as soon as they are ready, drain the water in which they were boiled and add half a tablespoon of parsley and half a tablespoon of olive oil. Mix them well.
- Meanwhile, fry the onions and finely chopped (or grated) carrots in olive oil.
- As soon as the onion becomes translucent, add the meat and spices. Fry until completely darkened and begins to separate.
- Add the wine if you decide to add wine, otherwise add the tomato puree directly and let it simmer over medium heat for about 10 minutes.
- Finally add the milk, a little parsley and add the sauce to the pasta bowl.
- Mix well and serve with grated parmesan and arugula leaves.
