Traditional Macedonian Dish – Bean Stew ??

In Macedonia, there is one saying used when something is very simple, we say: easy as preparing a bean stew. But the fact that almost everyone who has ever tried bean stew in different places has just as many different experiences proves it wrong. Experiences (from very bad to great) testify that the preparation of this delicious meal is not so simple. But trust me, the cooking time and energy are definitely worth it!   • Wash the beans with cold water several times. Leave them in a bowl and cover them with water overnight.
  • The next day, the current water is thrown away, and new water is added. Set the pan with the bean on medium heat, and when it boils, after ten minutes, that water should be also thrown away.
  • Pour new boiling water, but pour it slowly and on the side, watch out not to open the grains. Make sure that the water level is a few fingers above the beans, and after that put the pan immediately on the hob.
  • Finely chop the onion and peppers. Add the dried peppers if you have them, whole or in pieces. Pre-prepared sausages, bacon, or meatballs will get you a richer taste if they are added.
  • Add two tablespoons of red pepper, oil, and a little flour. Stir, wait for it to boil nicely, reduce the temperature, cover the beans with a lid and bring to a boil over low heat
  • Beans should not be mixed afterward. The density of the water is checked briefly with a spoon and if necessary water can be added (it is best if the water we add is hot), but it should be added carefully, little by little.
  • When the beans are well cooked, and this is seen on the top of the beans, the water boils differently, it is thicker and there are bubbles, then it means that the procedure is almost complete. Add salt, dried spice, mix briefly and simmer for another 5 minutes.
  • Finally, add the bukovetz spice in the bowl or in the bowl when the beans are already served. The total digestion time is 1.5 to 2 hours.
  • If you want to prepare a casserole dish, pour the beans into a pan and bake until it gets crusty and browned. Be careful not to leave too much or too little water on the beans beforehand so that they can evaporate in time. Bon Apetit! Don't forget the Shopska salad!
