Like other legumes, the lentil (lens culinaris) contains a lot of protein and is a very nutritious food. In addition, it has a strong power of lowering blood cholesterol levels and helping the maintenance of blood sugar levels. One of the healthiest Macedonian dishes is the famous lentil stew that you simply have to try.

- Finely chop the onion, pepper, tomato, and carrots. Peel the potatoes and cut them into cubes.
- Put the olive oil in a pot on the fire to heat. Put the chopped onion in the heated oil and fry it until soft. Add the chopped carrots and potatoes to the pot, place just a little water and leave vegetables for a short time to simmer.
- Add the chopped pepper and simmer for about 1 minute. Add to the pot the washed lentils, the chopped tomato, season with bukovetz pepper, red pepper, black pepper, and salt.
- Gradually, while constantly stirring, add boiling water to the pot and then cover it with a lid (My suggestion is to keep the pot not completely closed with the lid, in order to prevent the stew from overflowing). After 10 minutes, fill a cup with mix of the semi-boiled ingredients (vegetables, spices, and water), and pour it in a blender so you get a homogenous mixture. Pour it back to the stew. This way you will get a naturally thicker stew. Cook the stew on medium heat for an hour.
- Before removing from the heat, add finely chopped parsley and finely chopped garlic. Boil for a few more minutes and then you have your healthy meal all set for serving. Bon appetit!
