Well, I used to be a firm anti-lentils girl, but knowing its rich nutritional values, I decided to put some efforts and make a few experiments to get to a lentils meal that I will like. And it was all worth it! I don’t just like it, I LOVE IT! You should give it a try! It goes great with potatoes or rice.

- Chop the onion and the garlic cloves finely, then fry them in a bit of oil in a cooking pan.
- Add lentils in the same pan, the vegetable broth, salt and pour 3 cups of water. Cook it over a medium to low heat for about 40 minutes, or until lentils is cooked by your taste.
- 10 minutes before lentils is fully cooked, add the tomato paste, vinegar, mustard, tahini and honey. Mix it well so it becomes homogeneous. Cook it for another 10 minutes and serve it with rice or potatoes.
