- Chop the chicken meat into cubes and place it in a bowl. Add salt, black pepper and 1 tbsp of olive oil. Stir with a spoon and let it settle for 20 minutes.
- Add the marinated chicken into a heated pan, and cook it for 5 minutes on a high temperature. Bring the temperature down and add the chicken broth. Cook for 25 minutes on a medium temperature or until the water gets almost evaporated.
- Meanwhile, wisk together the melted peanut butter, honey, soya sauce and lemon juice. Add the coconut milk or cooking cream, stir well and pour the mixture into the cooking pan with meat.
- Add crushed peanuts and chopped parsley/basil for decoration. Serve it with potatoes or rice as a side dish.
