Moroccan saffron chicken is an aromatic dish, very easy and has amazing flavors!
The history of saffron can be traced back to 3000 years and it is one of the costliest spices used in Ayurveda. It has antioxidants that boosts immunity and has anti-inflammatory and anti-fungal properties. The medicinal properties of saffron are numerous. It has beneficial effects on skin, digestive system, circulatory and excretory system, nervous system (uplifts mood and fights depression; hence it is also known as a sunshine spice).

- Cut meat into cubes, and add all of the spices, only add saffron in 1 tsp (finger crushed). Cut the onion into small pieces and fry it for several minutes in a large skillet pot. Add the meat and fry for 5 minutes.
- Add the chicken broth and bring the dish to boiling. Lower the temperature and let it cook for 20 minutes.
- Add the rice and the other tsp of saffron, and let it cook for another 20 minutes. Stir occasionally.
