Frittata is an egg-based Italian dish similar to an omelette or crustless quiche or scrambled eggs, enriched with additional ingredients such as meats, cheeses, or vegetables. My frittata is filled with cheeses and vegetables. It is very easy to make and you should definitely make it for your Sunday brunch 🙂

- In a round pan for baking and frying (if you do not have one then make like me in a regular pan only for frying), fry the onion in a little oil.
- Once the onion is glassy, add the chopped beef prosciutto (optional), fry for another 1 minute, then add the vegetable mix. Cook it for another minute, combine the flavors and add a little salt.
- Arrange pieces of mozzarella and other cheese on top of the vegetables (if you use such), arrange arugula or fresh spinach leaves, and sprinkle with grated Parmesan. Sprinkle the eggs, which are previously well beaten and slightly salted, on top of all that.
- The eggs will start to get the structure of an omelet. Pass the ends of the pan with a fork or knife so that the frittata ends are not stuck to the pan. Cook for about 5 minutes, then reduce the temperature and cover the pan with a lid so that the cheeses can melt nicely and the whole mixture can be combined. Leave the pan covered on the hob for about 10 minutes. Sprinkle again with arugula/spinach and parmesan leaves. Cut into quarters and serve.
- If cooking in a pan suitable for baking, place the fried frittata in the oven at 200 degrees for 10 minutes instead of covering it with a lid. This way the frittata will be slightly baked from above and even tastier.
