Blue Cheese Stuffed Potatoes

I love potatoes in every form and believe it or not, I concluded that the most delicious potatoes are prepared in the simplest way and that is fascinating to me! Consider this healthy meal for your next lunch! Combine potatoes with vegetables or chicken skewers.

  • Wash the potatoes well, coat them on all sides with olive oil, rub a little salt on them and arrange them on a baking tray with lined paper.
  • Prick the potatoes with a fork and bake for 30-40 minutes at 190 degrees. Check with a toothpick if they are done.
  • Meanwhile, fry the mushrooms with a little salt. Once ready, add the hops to the mushroom pan and cook over low heat. Add the blue cheese, and as soon as it melts well, the potato stuffing sauce is ready.
  • Remove the potatoes from the oven and let them cool briefly. Cut a small piece of each potato horizontally to get an open potato that you can shred.
  • Chop each potato and fill it with sauce. You can combine the inside of the potatoes left during the digging with the sauce, or you can use it for another meal.
  • I baked my skewers on the same tray together with the potatoes. Enjoy!
