Zucchini and Garlic Mayonnaise

Isn't it great when the salad we eat is so juicy because of the delicious dressing that it is topped with? Wouldn't it be awesome to coat crispy breakfast buns with a great spread? Imagine having the perfect sauce for any kind of meat, vegetables, or pasta, right there in our fridge. And whenever you need it! This healthy mayonnaise is something I will do many more times, and I believe you will too!

Ingredients
  • 2 zucchini
  • 1 chopped garlic clove
  • 3 boiled eggs
  • 150 g feta cheese
  • 1 tsp salt
  • 1 tsp dried parsley
Instructions
  1. Chop the zucchini into cubes and put them in boiling water for 5-10 minutes, together with 1 tbs of salt.
  2. Strain well the boiled zucchini and put them in a blender together with the other ingredients and spices. The dose is sufficient for one medium-sized jar. Enjoy!
