Zucchini & Potato Patties

This recipe is very easy to make and involve only a handful of simple ingredients. It’s hands down my favorite way to make zucchini! And it is also dairy-free, and toddler friendly! I don't really need to tell you how healthy are veggies for your diet, and this way you get them in a very delicious way. The perfect side dish for any meal!

Ingredients
  • 2 large potatoes (boiled)
  • 1 large zucchini (grated)
  • 50 g semolina
  • 70 g wholemeal flour
  • 1/4 tsp salt (or more)
  • 1/3 tsp garlic powder
  • 2 eggs
  • 1 tsp dried basil
  • 10 g baking powder
Instructions
  1. Put the potatoes to boil, and grate the zucchini in a separate bowl and leave it for 20 minutes.
  2. Mash the boiled potatoes in a separate bowl and add the grated zucchini after squeezing it well. Add all the other ingredients and mix until you get a homogeneous mixture. Add more flour or semolina if it is too wet.
  3. Take the mixture with a spoon and place it in the form of meatballs (patties) in a tray lined with baking paper. Bake at 220 degrees for about 30 minutes (until slightly browned).
