Sicilian Sun-Dried Tomato Pesto (Pesto Rosso)

This is something I intend to make for such a long time and finally I decided to make it a few days ago. The taste? Oh my. It tastes so fresh that it reminds me of summer! :) It is a vibrantly-colored, deeply-flavored Sicilian condiment with almonds, garlic, herbs, and olive oil. It can be served with pasta, your favorite meats and fish, or as a delicious sandwich spread. If you like the regular pesto sauce, then you are going to LOVE this pesto rosso sauce. I paired it with some mozzarella and some wholemeal pasta. Enjoy!

Ingredients
  • 1 cup of sun dried tomatoes
  • 1/3 cup of unsalted almonds (ground)
  • 2-3 garlic cloves
  • 1 tbsp fresh rosemary
  • 1/3 tsp salt
  • 1/4 ground black pepper
  • 6 tbsp olive oil
Instructions
  1. Place all ingredients in the bowl of a food processor and process until they are finely chopped. Stop the food processor and scrape the sides of the bowl once or twice. Store, covered, in the refrigerator, for 5-7 days.
