Healthy and Easy No-Bake Cheesecake
Today I have for you a guilt-free cheesecake treat made with no flour or sugar AT ALL! Low in calories, big in flavor & absolutely delicious! A amazing mix made of few different nuts, dates, Greek yogurt (Olympus Greek yogurt in my case), and my previously posted easy & healthy jam as the final topping. A true fantasy it is!

Ingredients
For the dough

raw almonds

cup of plant milk
(rice or almond milk)

cup of oats
(processed as a flour in a food processor)

(add more if you want it sweeter)
For the cheese part

Greek yogurt

light cream cheese

For the tooping - raspberry jam

Instructions

Process the nuts individually, and especially the dates, then combine them in a bowl together with the milk. Transfer the mixture to a cake pan, flatten it and leave it in the freezer for 10 minutes.

Meanwhile, mix the ingredients for the creamy portion and place the mixture on the cooled base mixture. Refrigerate for about 10 minutes.

Melt the coconut oil in a saucepan and add the raspberries. Cook over medium heat for a few minutes, then add 1/2 cup water. Leave the pot on the fire for another 10 minutes, stirring constantly. Remove the pan from the heat, add the honey, stir, add the chia seeds and leave for about half an hour to cool. Coat the jam on the creamy part of the cheesecake.

Store in the freezer, remove the pieces 10 minutes before serving.
