Fussili With Homemade Pesto Sauce ??

Pesto is easy to make from scratch with just a handful of ingredients. Its fresh flavor is the highlight of this super-fast pasta dish, packed with freshly grated parmesan and maybe some white wine. Mmmm, perfect for this summer. Pesto sauce is always matched with twisted pasta, so make sure you buy some curly wholemeal pasta it before the sauce preparation. Enjoy!

Ingredients
    For the pasta
  • 400 g wholemeal fussili pasta
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp dried basil
  • For the sauce
  • 1 cup of fresh basil leaves
  • 2 garlic cloves (roughly chopped)
  • 50 g cashews
  • 1/3 cup of grated parmesan
  • 4 tbsp olive oil
Instructions
  1. Put the pasta in boiling water with a little salt and oil. Once they are cooked, drain the water and add a little more olive oil and dried basil, then mix well.
  2. Meanwhile, mash the cashews. Add the fresh basil leaves, parmesan, and 1 tablespoon of olive oil and blend to obtain a homogeneous mixture. Add another tablespoon of oil and blend again. Add the third tablespoon of oil, blend again and your pesto sauce is ready.
  3. Add the sauce to the pasta, mix well with a spoon and serve with grated Parmesan and white wine.
