Filipino Monggo Stew

Ginisang munggo is a Filipino spicy mung bean soup. It is made with mung beans, garlic, tomatoes, and spices and it is incredibly healthy and tasty. Since I didn't have Asian mung beans, I made it with red lentils and as a person who is not-a-huge-lentils-fan, I can say that this is the best thing that I have ever tasted in my entire life! I still cannot believe that it was made in my own kitchen! You can find all of the spices in your store nearby, so don't miss this incredible taste that you can get in only 30 minutes!

Ingredients
  • 1 cup of red lentils
  • 1 tomato (chooped in cubes)
  • 4 garlic cloves (chooped)
  • 1 tbsp butter
  • 1 green pepper
  • 4 cups of water
  • 1/2 tsp salt (add more if you like it saltier)
  • 1 tsp dried mint
  • 1/2 tsp chilli
  • 1/2 tsp ground garlic
  • 1/2 tsp ground ginger
  • 1/2 tsp ground red paprika
  • 1/4 tsp black pepper
  • 100 ml cooking cream or coconut milk
Instructions
  1. Heat the butter in a cooking pan and fry the chopped garlic. Add the chopped tomato and stir for another minute. Add the water, the red lentils, and all of the spices and cook for 30 minutes.
  2. Pour the cooking cream/coconut milk right after the stew is done, stir it with a spoon, and cook it for another 2 minutes. Decorate with cooking cream/coconut milk and a chopped scallion. Serve with pickles for the best taste.
