Crispy & Baked: Sweet Potato Fries

Enjoy these addictive oven-baked sweet potato fries as a snack with your favorite dipping sauce or as an addition to any main dish. And once you know how to make them, you will never have an excuse to not cook sweet potatoes again. Those kids who won’t eat their veggies? Trust me, they’ll eat so many of these fries, their skin will turn yellow from that beta carotine (a large source of vitamin A).  They are also a source of Vitamin C and B6. Try this healthy side dish your whole family will love!

Ingredients
  • 3 batatas - sweet potatoes
  • 2 tbsp olive oil
  • 2 tbsp cornstarch (optional)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1 tsp salt (optional)
  • 1 tsp dried basil or oregano
Instructions
  1. Wash the potatoes well and without peeling them, cut them into large and thin pieces.
  2. Put the potato slices in a deep bowl and season with salt, garlic powder, basil/oregano, cornstarch (optional), and black pepper. Put 2 tablespoons of olive oil and mix well with a wooden spoon to stick the spices on each potato slice, on each side.
  3. Pour the potatoes over a baking sheet with pre-placed paper and bake for 20 minutes at 220 degrees. Be sure that the fries aren’t overlapping, or else they will not cook evenly. Flip the potatoes on the other side and bake for another 15 minutes.
  4. Transfer the baking sheet to a cooling rack, then let the fries rest for 5 minutes. Serve warm.
