Ingredients
-
2
bananas
-
1
cup
wholemeal flour
-
50
g
hazelnuts
(partially ground)
-
50
g
dried aronia or blueberries
-
1
cup
milk
(I use rice milk)
-
4
tsp
cocoa
-
1
piece of baking powder
-
2
tbsp
peanut butter
-
1
tsp
vanilla extract
(optional)
Instructions
-
Put the bananas in a deep bowl and mash them with a spoon. Add the remaining ingredients (except the blueberry jam) and mix well with a spoon to get a homogeneous mixture for the muffins.
-
In a muffin tin, place decorative paper muffin baskets and put a spoonful of the mixture in each of them and flatten well.
-
Put a small spoonful of natural blueberry jam on top of the mixture in each paper basket. Put another tablespoon of the muffin mixture on the jam in order to get a full and closed muffin cupcake.
-
Decorate as you wish (I put grated white chocolate on the top of each cupcake) and bake for 30 minutes at 180 degrees.
