Blueberry Jam Muffins

Ingredients
  • 2 bananas
  • 1 cup wholemeal flour
  • 50 g hazelnuts (partially ground)
  • 50 g dried aronia or blueberries
  • 1 cup milk (I use rice milk)
  • 4 tsp cocoa
  • 1 piece of baking powder
  • 2 tbsp peanut butter
  • 1 tsp vanilla extract (optional)
Instructions
  1. Put the bananas in a deep bowl and mash them with a spoon. Add the remaining ingredients (except the blueberry jam) and mix well with a spoon to get a homogeneous mixture for the muffins.
  2. In a muffin tin, place decorative paper muffin baskets and put a spoonful of the mixture in each of them and flatten well.
  3. Put a small spoonful of natural blueberry jam on top of the mixture in each paper basket. Put another tablespoon of the muffin mixture on the jam in order to get a full and closed muffin cupcake.
  4. Decorate as you wish (I put grated white chocolate on the top of each cupcake) and bake for 30 minutes at 180 degrees.
