Vanilla Cream Pumpkin Cake

Ingredients
    For the cake
  • 1 pumpkin
  • 2 eggs
  • 1 tbsp baking powder
  • 2 tbsp wholemeal flour
  • 2 tbsp honey
  • 1/2 tbsp cinnamon
  • For the topping
  • 1 tbsp sour cream or Greek yoghurt
  • 1/2 tbsp honey
  • 1/4 tsp vanilla extract
Instructions
  1. Cut the pumpkin into round pieces and peel its skin off. Boil it in a small amount of water for 20 minutes.
  2. Mash the pumpkin with a spoon and add all the other ingredients. Bake it for 40 minutes. Let it cool down completely before cutting it into pieces.
  3. Mash the ingredients for the vanilla cream and pour it over each piece of pumpkin cake right before serving. Add a bit of cinnamon over the cream for even better taste.
