Scrambled Eggs Italian-Style

Just some regular eggs easily given some Italian accent and tasting, absolutely delicious! They are usually served on a cheese-garlic bread, but I have for you a bit more interesting and healthier version :) Take a look!

Ingredients
  • 2 eggs
  • 1 wholemeal tortilla
  • 1 tbsp butter
  • 2 pieces of cheese
  • 1.5 tsp garlic paste
  • 1 tbsp dried or fresh parsley
  • 2 tbsp freshly chopped basil
  • 1.5 tbsp parmesan
Instructions
  1. Melt the butter and mix it with the garlic paste and the parsley. Spread half of it on the tortilla, add some cheese and close the tortilla. Cook it in a microwave for up to 4 minutes, or until it gets crunchy.
  2. Meanwhile, scramble the eggs together, add the chopped basil and the parmesan. Cook them in a frying pan.
  3. When the garlic-cheese tortilla is done, pour the scrambled eggs all over it. I added some chopped arugula for better looks. Enjoy!
