Mocedonian Cuisine: Stuffed Peppers

Today I present you a recipe for one of the most favorite dishes among Macedonian people that is above all, super-healthy and easy to digest. The instructions are very easy to follow, and you will be very proud for easily coming up with the traditional taste and smell of stuffed peppers entirely on your own!

Ingredients
  • 7-9 large peppers
  • 400 g minced beef
  • 200 g rice
  • 1 onion
  • 2 tsp salt
  • 1 tsp fresh or dried parsley
  • 1/2 tsp black pepper
  • 1 tbsp tomato paste
  • 1 tsp dried red paprika
  • 2 tbsp oil
  • 4 cups of hot water
Instructions
  1. First, finely chop the onion in a pan with heated oil and fry for a few minutes. Add the meat and spices, salt, black pepper, and parsley, and fry for ten minutes. Add the rice and fry for a few more minutes. With that, the mixture for filling the peppers is ready.
  2. Chop the peppers in the upper part of the stalk, so that the removed part will serve to match the stuffed peppers. Clean them well, fill them with the meat mixture, cover them with the part of the pepper that has a stalk and close them nicely with the help of one or two toothpicks so that they do not move during cooking.
  3. Arrange the peppers in a deep saucepan, in a vertical position. Add the boiling water and cook the stuffed peppers on low heat for about 1 hour. Before removing them from the hob, make a mixture of tomato puree, red pepper and oil and sprinkle the peppers. Let them boil for another ten minutes.
