Mexican Chilli Con Carne 🇲🇽

“Chili con Carne”. Three little words that describe such a wonderful meal. Today I am bringing this Mexican speciality straight to your kitchen! You can combine it with cooked rice or wrap it in a tortilla with some salad. Either way you will love it!

Ingredients
  • 350 g minced beef
  • 1 large can of red beans
  • 1 medium can of tomatoes
  • 1 small can of corn
  • 2 onions
  • 3 garlic cloves
  • 1 tsp chilli powder (add more if you like it spicier)
  • 1 red paprika
  • 100 ml red wine
  • 1/3 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp ground corriander
  • 1 tbsp chopped parsley
Instructions
  1. Put all of the spices (except for the chili powder) in the meat. In cooking pan, fry the chopped onion until it gets translucent. Then add the chopped garlic cloves, and the roughly chopped red paprika. Add the seasoned meat too, fry it until it gets brown and then add the wine. Cook it over medium temperature until the wine gets completely evaporated.
  2. Add the read beans, the canned tomatoes, the chilli powder and the corn. Stir and cook for 10 more minutes. Serve with rice or wrap it in a tortilla.
