Creamy Tahini Pasta šŸ‡®šŸ‡¹

The tahini sauce is consisted from few simple ingredients ā€“ tahini being the star of this recipe. Tahini is a rich, creamy paste made from ground sesames, you can find it in every market. Tahini is fairly low in calories but high in fiber,Ā protein, and several importantĀ vitaminsĀ andĀ minerals. It pairs amazingly with fresh lemon and garlic, and you can use it both for sweet and for savory dishes. A bit of veggies, salt and pepper rounds out the flavors.

Ingredients
  • 350 g wholemeal pasta
  • 1/2 cup of tahini
  • 1/2 cup of cooking cream or water from the cooked pasta
  • juice from 1 lemon
  • zest from the same lemon (optional)
  • 1 garlic clove
  • 3/4 tsp salt
  • 1/4 tsp black pepper
  • 250-300 g canned peas & carrots
Instructions
  1. Begin cooking the pasta according to the package instructions.
  2. While the pasta is cooking, add the tahini, lemon juice, lemon zest, garlic, salt, and pepper to a bowl and mix well.
  3. When the pasta is almost done cooking, remove 1/2 cup of the cooking water (or cooking cream), add it to the bowl with the tahini mixture, then whisk well.
  4. Once the pasta is cooked and drained, add veggies, pour the tahini sauce over the pasta and mix to coat the pasta evenly with sauce. Garnish with some chopped fresh basil or parsley (optional), then serve hot.
